Very interesting comments. However, to my understanding, traditionally, the number of pleats indicates the experience of the chef. Eg. the head chef gets to wear a hat with most pleats. The number of pleats also indicates the number of ways the chef can prepare dish in. The chef hats has been wearing since 16th century. And the hats is used to cover the head to avoid any stray hairs from falling into the dish being prepared.
