ios5 to ios6, itune will need to erase google maps files in your iphone then copy apple 3D maps files to your iphone, imagine that!!  It would take a long time for that operation, in addition to other "upgrades".  I would not update to ios6 unless they change apple maps back to google maps or if apple would give me the option to choose which maps I want when I update.
